    These regulations require that establishments carrying out purification (CDM) or even the simple dispatch centers (CSM), a series of tasks necessary for the proper conduct of the activity, ranging from the application of HACCP procedures, the preparation of DDR (Registration documents necessary for the traceability of lots), self-control business by chemical and microbiological analysis, training of personnel involved in operations. The new regulations also lay down a range of penalties, both administrative and criminal matters and, in case of default of serious nature, the immediate closure of the activity.
